Today’s Special: Chicken and Shrimp Fried Rice!
Ingredients:
4 Cups of Uncle Ben's rice
3 Cooking Spoons of Vegetable oil
4-5 Cups of Chicken Stock
3 Cups of Mixed Vegetables (Green peas, Runner beans, Green pepper, Sweetcorn, Carrot)
1 Large Onion, Chopped
minced garlic, 3 cloves
1 tbsp minced ginger
8 chicken wings
1 pound of cooked shrimp (deveined)
1-2 cups of Cooked Andouille sausage
1 cup of Liver, cooked and diced
1 Cup of Chopped green Onions
4 Knorr Chicken Cubes
1 Tablespoon of Curry Powder
1 Tablespoon of Dried Thyme
Salt to Taste
Shrimp chicken fried rice Recipe Preparation:
Create your chicken stock by boiling 6 to 8 chicken wings in a pot for about 25 minutes. Add salt, half an onion, 2 Knorr cubes, and a sprinkle of curry and thyme.
Once the chicken has cooked for 25 minutes, fry it in vegetable oil for another 10 minutes. After frying, shred the chicken and set it aside.
Place a pot on medium heat and pour in the vegetable oil used for frying the chicken. Once the oil is hot, add the washed rice and fry for 2-3 minutes, stirring occasionally to prevent burning.
After frying, pour in the chicken stock, adding enough to cook the rice. Ensure the liquid just covers the rice; if there's not enough stock, add water. Mix in the chopped onions, curry powder, thyme, Knorr cubes, and salt.
If chicken stock is used, be cautious with salt and seasoning, as the stock already contains salt.
Then cover the pot tightly and let the rice cook.
While the rice is cooking, add a cooking spoon (or two) of vegetable oil to a pan and fry the minced garlic and ginger while mixing for 30 seconds, add the cooked diced liver and fry for 2 minutes, then set aside. Fry the andouille sausage for 2 minutes, then set aside.
Fry the shrimp for 2-3 minutes per side, then set aside.
Add salt and Knorr cubes to taste to your mixed vegetables and fry them in the same oil used for the liver, sausage, and shrimp for 2 minutes, stirring constantly.
Now combine the shredded chicken, diced liver, and andouille sausage with the mixed vegetables and mix well. Add the almost fully cooked rice to the vegetable mixture and stir intermittently for about 5 minutes.
Add the shrimp and green onions and stir for about a minute.
