Banana leaf moi moi (Moi Moi elewe)



To prepare banana leaf moimoi, you need to create a blend of peeled honey beans and pepper, wrap it in leaves, and steam it for 45 minutes

Prepare the filling 

  1. Soak the honey beans for at least 2 hours and remove the skin by scrubbing. You can pulse the beans in a blender with water several times to separate the skins.

  2. Blend the beans with 2 bell peppers and half an onion. Optionally, add 1 cayenne pepper and 1 scotch bonnet pepper if you prefer more heat.

  3. Incorporate other ingredients like smoked mackerel, corned beef, or shredded chicken into the mix.

  4. Add boiled eggs, cut into four pieces, to each leaf (one piece per leaf).

  5. Grease the surface of the banana leaf with canola oil to prevent the moi moi from drying out.

Wrap the mix in the leaves 

  1. Cross two leaves over each other.

  2. Fold the leaves to form a cone shape.

  3. Pour the filling into the cone, ensuring not to overfill it.

  4. Fold the bottom and top edges of the leaves.

Steam the moimoi 

  1. Place the wrapped moimoi in a pot with a steam basket and water.

  2. Cover the pot with additional leaves and steam for approximately 45 minutes.

  3. Allow it to cool for at least 10 minutes before serving.



Ingredients:


  • Banana leaves

  • Beans

    honey beans 

  • Oil

    Vegetable oil

  • Seasonings

    Salt, bouillon cubes, and other seasonings to taste 

Other ingredients

  • Dried ground crayfish, smoked mackerel fish or corned beef or shredded chicken,

  • boiled egg slices, onions, garlic, chili peppers, red bell peppers, and additional garnishes
